

New Orleans style creole pralines have their origins in 17th century France. They have become synonymous with the city of New Orleans, but can be found throughout the south from Georgia to Texas. It is a sweet confection named after the French diplomat, Cesan du Plessis Praslin. His last name morphed into the present "Praline".
"Pralineres", free women of color, sold the candies as an enterpreneurial vehicle in the 1800's. They could be seen selling these delicacies, from their baskets, throughout the French Quarter yelling "Belles Pralines" to passersby. The recipes vary, but everyone will agree that the Praline is a true sweet gem from the south.
